Apple Cider Vinegar (with the Mother)
Apple cider vinegar (ACV) is fermented apple juice — a two-stage fermentation that converts sugars first to alcohol (yeasts) and then to acetic acid (Acetobacter bacteria). Unfiltered, "with the Mother" ACV retains the biofilm of acetic-acid bacteria and yeasts produced during fermentation. ACV is sold in the UK as a culinary vinegar, a tonic drink, and as a food supplement (capsule, gummy, liquid).
